
Light, Simple, and Perfect Every Time
The sponge cake was one of the very first recipes I learned and after years of baking, it’s still one of my favorites. This easy vanilla sponge cake has saved me countless times when I needed a quick base for a dessert or a simple sweet for guests.
What I love most is how effortless it is. You don’t even need a scale just remember: one egg, one spoon of sugar, and one spoon of flour. That’s it! It’s the kind of recipe that proves that simplicity often leads to the best results.
Soft, fluffy, and beautifully golden, this cake can be filled with cream, layered with jam, or enjoyed just as it is light and full of subtle vanilla and lemon aroma. A true classic that every baker should know.
INGREDIENTS
- 150g sugar
- 300g eggs
- 40g oil
- 2g salt
- 1g vanilla
- 5g lemon zest (optional)
- 150g flour

- In a bowl fitted with a whisk attachment, whip the eggs with sugar and salt on high speed for about 10 minutes, until thick and pale it should form a ribbon when lifted.
- Reduce to low speed and pour in the oil, vanilla, optional lemon zest. Mix gently for about 30 seconds.
- Sift the flour over the mixture and carefully fold it in by hand using a spatula to keep the batter light and airy.
- Pour into a greased or lined baking pan.
- Bake at 180°C (355°F) for approximately 20 minutes, depending on the size and shape of your cake.
- The cake is ready when lightly golden and springy to the touch or just poke a toothpick in it if nothing sticks on it your sponge is ready.
