Growing up, we didn’t have many sugary sweets around the house, but there was always plenty of chocolate. Our mother often made rich chocolate ganache for bonbons and pastries, and we would hover nearby, waiting for the chance to lick the bowls clean once she was finished.

This recipe brings back those memories in the form of classic chocolate truffles. They’re simple easy to make, yet taste like something from a fine chocolatier. Silky, rich, and perfectly balanced, they melt in your mouth with just the right touch of vanilla and honey.

These truffles are a wonderful gift, a beautiful dessert to serve after dinner, or simply a small luxury to keep tucked away for yourself.

INGREDIENTS

  • 250g cream
  • 250g dark chocolate
  • 50g butter
  • 20g honey
  • 1 vanilla pod
  • For coating: Cocoa powder 

METHOD

  • In a saucepan, warm the cream with honey and vanilla to 80°C (175°F).
  • Pour the hot cream over the chocolate in a bowl.
  • Let it sit for 2 minutes, then stir gently until fully combined and glossy.
  • Once the mixture cools to about 36°C (97°F), add the room temperature butter.
  • Mix until smooth and silky.
  • Leave the mixture to solidify at room temperature.
  • Once firm, divide into bite-sized portions and roll into small balls.
  • Coat each truffle in cocoa powder until evenly covered.
  • Store in an airtight container at room temperature or refrigerate for a firmer texture.
