A Chocolate Lover’s Dream

Ever wondered what happens when you fill your cookies with peanut butter? You get one of the most addictive treats we’ve ever made. These peanut butter cookies are soft, rich, and deeply chocolatey, with a creamy peanut butter center that melts in every bite.

They’ve quickly become one of my favorite sweets to bake. The combination of cocoa, coffee, and vanilla gives the dough a deep flavor that perfectly balances the nutty filling. Whether you serve them warm or save a few for later, they’re the kind of cookies that never last long trust me, it’s impossible to eat just one.

INGREDIENTS

  • 150g flour
  • 6g baking powder
  • 3g instant coffee
  • 2g salt
  • 85g butter
  • 65g cocoa powder
  • 300g brown sugar
  • 2 eggs (about 100g)
  • 250g peanut butter cream
  • 1g vanilla powder
  • For coating: Icing sugar

  • In a saucepan, melt the butter over medium heat.
  • Stir in cocoa powder, salt, and instant coffee until smooth.
  • Transfer the mixture to a mixing bowl with a paddle attachment.
  • Add the brown sugar, flour, baking powder, and eggs.
  • Mix until well combined and smooth.
  • Let the dough rest for about 10 minutes to firm up slightly.
  • Divide the dough into equal portions.
  • Flatten each one, add a small spoon of peanut butter cream in the center, and close it carefully.
  • Roll each cookie in icing sugar until evenly covered.
  • Place on a parchment-lined baking sheet and bake for 10 minutes or until the tops crack slightly.
  • Let the cookies cool before serving to allow the centers to set.
